Method of Cooking

This dish combines a number of different influences from my travels through Asia and Europe
With such ingredients as Torgarishi from Japan, Mangoes from Thailand, Salmon from my time in England

Place Nori sesame seeds and dried orange peel on a tray and toast under the salamander, remove and add torgarishi (keep dry)
Cut mango into ½ cm dice and place into a bowl, add basil and mint. Drizzle Balsamic vinegar season with salt and pepper. Set aside.
Mix fennel with grapeseed oil and diced tomato which has had the skin removed. Season to taste.
Rub salmon skin with the sea salt and allow to stand for about 20 minutes.
In a hot pan add some butter and olive oil, place the salmon skin side down and cook until skin is brown and crispy, turnover and brown the other side. 2-3 minutes cooking time. Remove from the pan and Dip the non skin side into the nori mix. Place the fennel salad in the middle of the plate and place a dollop of the mango salsa on top.Then place the salmon on top of this. Drizzle with tangerine oil.
