Some interesting facts about the Land of Smiles:

1. Thailand is home to the world’s largest gold Buddha (9.8 feet tall), the largest crocodile farm and the longest single-span suspension bridge.

2. The world’s smallest mammal, the Craseonycteris thonglongyai (the bumble bat), is found in Thailand.

3. Bangkok was once called the “Venice of the East” because its original buildings stood on stilts above the Chao Phraya River. However, as Bangkok grew larger, most canals were filled and paved.

4. Thailand has had several names over the centuries. For hundreds of years it was known by the names of its dominant cities, such as Sukhothai, Ayutthaya, and Thonburi. Since the 1800s, it has repeatedly switched back and forth between Siam (Sanskrit meaning dark or brown) and Thailand.

5. The brothers who gave the world the term “Siamese twins” were born in 1811 in a village near Bangkok. The twins Eng and Chang were joined at the chest and left Thailand for the US when they were 17 years old. Each brother married, and between them they had 22 children. In 1873, Eng caught pneumonia and died. Chang died a few hours later.

6. The Mekong River, which forms part of Thailand’s eastern border, supports more than 1,300 species of fish. It holds some of the world’s largest freshwater fish, including a giant catfish which can reach nearly 10 feet long and weigh as much as 660 lbs.

7. In 1999, a group of 282 skydivers set the record for the largest number of skydivers in a free-fall formation above Ubon Ratchathani, Thailand. They held the link for 7.11 seconds.

8. More than 1,500 species of orchids grow wild in Thai forests. Thailand is the world’s number one orchid exporter.

9. The Ramakien is the national epic narrative of Thailand and has influenced everyday Thai life for hundreds of years. The story is actually the Thai version of Ramayana, a poem first told in India 3,000 year ago.

10. Traditionally in Thailand, feet are considered lowly because they symbolize an attachment to the ground, which is a cause for human suffering. As such, a person must never sit with their feet pointing to a statue in a temple or at some other person. Feet must always be tucked underneath the body.

Executive Chef Kai Oliver Kauder’s Snow fish Pave roasted in pancetta and crispy angel hair pasta with blistered cherry tomatoes, asparagus and Foie gras sauce

The white, juicy and strong snow fish has a variety of flavors. A fantastic combination from the slightly smoky pancetta ham and crispy savory pan fried angel hair pasta, not to forget the delicate creaminess of the duck liver Foie Gras sauce with a touch of cognac sliding over your pallet and urging you to take another bite.

Anantara Hua Hin Snow Fish Pave 

Recipe

Ingredients:

135 gr.    Snow fish fillet

30 gr.      Duck liver Foie Gras for sauce

40 gr       Fine sliced pancetta affumicata

40 gr.      Angel hair pasta blanched

50  gr      (3 pieces) of cherry tomatoes

60 gr.      Pealed and blanched green asparagus tips

25 gr.      Whipping cream

10 ml.    Regency cognac

2 ml.        Lemon Juice

1 ml.      Herbal green oil

1 ml.        Balsamic reduction

Pinch     Salt

Pinch     White pepper

Method:

The snow fish is seasoned with the lemon juice, salt and pepper and wrapped with the pancetta and blanched angel hair pasta.  Then pan fry inside the pan from all sides until the pasta has gained a little color and starts being crispy. Place inside the preheated 200 degrees Celsius oven for about 5-7 minutes ensure that the fish is just done, let’s say medium well plus to keep it juicy.

Now prepare the asparagus in a bit of butter together with the tomatoes just so they gain some heat and still have a bite.

The sauce is prepare by melting the duck liver inside the cream and perfume with some cognac, salt and pepper do not boil the sauce since the liver will change the structure and separate.

Assemble:

Place the green asparagus next to each other in the middle of the plate forming a base to place the crispy juicy fish on top.  Drizzle the foie gras sauce around the fish and decorate with the three tomatoes, the balsamic reduction and some drops of the herbal oil.

Recommended Wine: 

Barbera tends towards a stronger acidity with a definite note of cherry, deep, dark ruby color, and little or no tannins.

Executive Chef Matthias Mittnacht’s favourite: Prawns and Sea Bass from Anantara Lawana Koh Samui

Recipe

Ingredients:

Sea bass fillet         500 gms (we prefer to use fillets from a 4-5kg fish)

Jumbo prawn         2   ea (size 10 per kg)

Potatoes                  320  gms (blanched and peeled)

Morning glory       320  gms (trim and wash – alternatives / kai lan or choi sum)

Beurre Blanc:

Ginger               50        gms (recipe 1)

White wine     200      mls

Fish stock       400     mls

Cream              160      mls

Butter              160      gms

Coriander       20        gms (pick the leaves and chop fine)

Tomato            80        gms (peel and deseed the tomato, small dice)

Black beans    40        gms (salted fermented – can be found in Asian groceries)

Salt & Pepper

Recipe for  candied ginger -

Step 1 – first peel the ginger, place in cold lightly salted water and bring to the boil

Step 2 – once the ginger has cooled, slice and boil in a sugar syrup (50/50 water and sugar)

Step 3 – place a flat tray in a warm oven over night until it has become similar to dried fruit

Step 4 – chop finely and hold to the side for use later in the sauce

Recipe for Beurre Blanc -

Step 1 – place the white wine and fish stock into a stainless steel pot and simmer until reduced by half

Step 2 – Add the cream and bring to a light boil, reduce by 1/4

Step 3 – cut the butter into small cubes and keep cold, remove the sauce from the heat and whisk in the butter one piece at a time

Step 4 – add the black beans and then add salt and pepper as necessary

Step 5 – before serving finish with the tomato and coriander

Method :

Season the sea bass well on the skin side, in a heated non stick frying pan place the fish skin side down, allow time for the skin to become crisp then turn the fish – at this time you may add the prawns and lower the heat, remove the seafood when almost cooked and add a dollop of butter, keep warm in the oven. In a separate fry pan, cook the slices of potato (4/5 each) until golden brown and remove, season carefully and add to the oven. During this time warm the sauce and in a wok heat a little sunflower oil and sesame oil and fry the morning glory, season lightly with a couple of drops of soy sauce.

Place the sauce first on the plate, then place the potatoes in the middle layering the potatoes into a circle. Top with the morning glory followed by the fish and prawns and garnish with a spring onion.

Tips:  a fried stick of spaghetti makes a nice edible skewer to help balance the prawns

Recommended Wine:  Chardonnay with a touch of oak ageing

Red Prawn                  200      g

Avocada                      70        g

Baby Romaine           100      g

Mango                          800     g

Caper berries             4          pieces

Olive oil                        1           tablespoon

Mayonnaise                80        g

Brandy                         30        g

Tomato sherry          60        g

Tomato ketchup       30        g

Salt                                  2          g

Pepper                           1           g

Spring onion               1           g

Method of cooking

Toss the baby romaine with cocktail dressing and place inside a double martini glass

Layer the red prawns and mango sweet chilli sauce.

Garnish with caper, avocado salsa and baby herbs.
